Linda's Soy Burgers


2 cups soybeans, uncooked
2 carrots, peeled and grated
1/4 cup chedder cheese, grated
1/3 cup celery, chopped
1 egg
1/4 cup whole wheat flour
3 tablespoons wheat germ
1/3 tablespoon curry powder
1/2 tsp. salt
1 green onion, chopped
a few dashes onion powder
1 clove of garlic, if you like garlic
six or seven pita breads, plain yogurt,
lettuce leaves or sprouts, & thousand island dressing,
for serving

Beforehand: boil the soybeans until soft enough to puree, about 1 hour. Pre-soaking them for a few hours can shorten the boiling time. Puree the cookeed soybeans. Mix everything together in a big bowl. Add any extra flour as necessary if the mixture is too sticky to hold together in patties. Shape into patties and fry in a little canola until golden brown on each side. Serve in pita pockets, with plain yogurt, sprouts or lettuce, whichever you prefer and a little thousand island dressing. I also like to stick some sliced onions, a tomato slice, and a few cilantro leaves in too.

Note: feel free to throw a little of whatever you have on hand to stick them together, and spice up texture: oatmeal, sunflower seeds, whole-grain bread crumbs, and sauteed onion are a few things I've tried.
